A Recipe For Sandy

My husband called me from work the other day and told me that he bragged, about my Bacon-Wrapped Meatloaf, to his co-workers.  Some of them asked for the recipe.

I was overjoyed!  Then, promptly got lost in the lovely chaos at our house.  Until Sandy asked for it again. So, here it is:

Bacon-Wrapped Meatloaf (GFCFSF)

Turn the oven to 350 degrees.  Then, use a large bowl to mix:

3 lbs beef, ground
3 garlic cloves, chopped
2 large eggs, slightly beaten

Use a smaller bowl to mix:

1 1/2 cups of quick-cooking oats (not instant), GF
2 tsp salt
1/2 tsp black pepper
1 tsp paprika (optional)
1 tbsp cumin, ground

Add the contents of the smaller bowl to the large bowl and mix gently.

1/2 to 1 cup of milk (dairy, coconut, almond…)
3/4 lbs bacon, thickly sliced
Then, add milk to the mixture in the large bowl (1/4 a cup at the time) until the mixture sticks together without being watery.  Form the mixture in a loaf and place it gently in a pan (9X13).  Cover the meatloaf with thick slices of bacon laid across the loaf.  Cover it lightly with a large piece of foil and bake for 50-60 minutes.

Remove the foil and finish baking the loaf for another 10-15 minutes to give the bacon a crispy texture.  Let the meatloaf rest (covered) for 15 minutes before slicing.

Enjoy with mashed potatoes and steamed veggies or as a sandwich!
