GF Spicy Cumin And Black Beans Brown Rice With GF Salmon Cakes

I am in a rut.

I have been cooking the same dozen plus dishes for the last several weeks.  I am not sure about my family, but my taste buds are revolting.  I am looking for something different.  And I think I found it:

GF Spicy Cumin and Black Beans Brown Rice (it’s a mouthful – pun intended)

Ingredients:

1-3 tbsp. oil;

1 large onion peeled and thinly sliced;

1 tsp. salt

1-3 tbsp. sugar;

1 cup of brown rice, rinsed;

2 1/4 cups water or broth, GF;

1 cup diced tomatoes,GF;

1 cup cooked GF black beans, rinsed;

1 tbsp. cumin powder, GF;

1-2 tsp. red pepper flakes, GF;

1/4 cup fresh parsley, chopped.

Method:

Place the oil, onion and salt in a cast iron pan (use a low setting).  Sweat the onion in the covered pot for 15-20 minutes or until the onion slices are soft.  Add the sugar, mix well and allow the onion to turn a golden color (not dark brown).

At this point, the sugar caramelizes the onion slices.  Watch the pot very carefully.  It can burn the onion.  Add the rice and mix it well.  Then, add the remaining ingredients, cover the pot and let it simmer for 35-40 minutes.    Add the parsley just before serving.

GF Salmon Cakes

Ingredients:

14 oz. salmon in the can, GF;

2-3 cloves of garlic, diced;

1/2 cup flax-seed meal;

1/2 tsp. salt;

1/4 tsp. black pepper;

1/4 cup chopped fresh dill;

2 large eggs.

Method:

Mix all ingredients in a small bowl.   Make small balls by using a 1/4 cup scoop or 2 spoons.  Flatten the balls slightly and fry them for 3-5 minutes on each side.  Serve immediately.
