Tarragon Chicken In A Crock Pot (GFCFSF)

I love quiet Sundays afternoon with all the family enjoying a meal and visiting.

I also love to help with the Coffee Hour at our church.  We serve about 100 people every Sunday.  It is called Coffee Hour but we serve a full dinner with a hot dish, salads, lunch meat and sweets with coffee and juice or milk.  It takes time to set-up, serve and clean-up.  As such, by the time we are heading home, I am not ready to start cooking again and it is very hard to go out as a  family on a gluten-free diet.

So, I hired help: my beloved and very used Crock-Pot.  This is one of our family’s favorite:

GF Tarragon Chicken

Spray the inside of the pot to make clean-up a little easier.  Then, mix the following ingredients in a glass measuring cup:

  • 1/4 cup balsamic vinegar;
  • 1/4 cup oil;
  • 1/2 cup water, broth or white wine.

Set aside and clean and dry a whole chicken.  Layer the following ingredients in your pot:

  • 10-12 potatoes (red or golden) cut in large chunks;
  • 1 whole chicken;
  • 1-3 cloves of garlic;
  • salt and pepper to taste;
  • 6-8 springs of fresh tarragon washed;
  • the above mix.

Set the pot on low for 5-6 hours and serve with a green salad and slices of fresh bread.
